HOT SAUCE (such as red hot pepper sauce)
or HONEY GARLIC SAUCE

Cooking Method

  • Chicken wings are a popular menu item, but easy enough to make at home. Here they are simmered in water, rather than deep fried, which short cuts the grilling time and keeps them plump.
     
  • Take your pick, spicy or honey garlic. You may find an additional grill rack useful if the grates on your barbecue are widely spaced. Make sure your grill is clean and well oiled as wings have a tendency to stick.
     
  • For fun serve with celery sticks and blue cheese dressing.
     
  • Trim any excess fat from wings, cut off wing tips and cut wings into two by separating the joint. Place in large saucepan, add water to just cover the wings, and bring to boil. Reduce heat and simmer ten minutes. Drain and pat dry. Meanwhile, rub grill well with vegetable oil and preheat barbecue for 10 minutes.

Hot Sauce

  • Toss some parboiled wings in hot sauce to coat.
     
  • Reduce barbecue heat to medium-low and cook wings until crisp and nicely glazed. Brush with sauce and turn often. Cook for 15 to 20 minutes. Serve with additional sauce, if desired.

Honey Garlic Sauce

  • Combine ingredients for honey garlic sauce.
     
  • Toss remaining parboiled wings in this sauce until well coated.
     
  • Reduce barbecue heat to medium-low and cook wings until crisp and nicely glazed. Brush with sauce and turn often. Cook for 15 to 20 minutes. Serve with additional sauce, if desired.
